Just discovered this recipe today in china have managed to find a recipe for it online - helps get a garlic and pickle fix in one.
Chinese Sweet Pickled Garlic Recipe
Equipment 1 glass jar with air tight lid
Ingredients 3-4 heads garlic 2 tsp salt 1 cup rice vinegar (also distilled white vinegar/white wine vinegar or balsamic vinegar can work but all create different flavours) 1 cup white sugar (if using balsamic vinegar use brown sugar)
Directions Peel off outer layers of garlic skins until only the skin on the separate garlic cloves are left. Rinse the cloves well under running water. Soak in cool distilled water for a day, changing the water a few times. Remove cloves from water, drip dry, spread out on non reactive dish, sprinkle with salt. Let sit in a cool spot for 3 days, turning over a couple of times a day.
Drain well and place into a clean dry air-tight glass jar. Mix the vinegar and sugar well in a bowl until sugar is melted. Pour into the jar until the garlic cloves are covered. Use a small porcelain dish to weigh the cloves down so that all the cloves are immersed in liquid. Close the air tight lid and keep the jar in a dark corner for 1 month and a half. Remove skins before eating.

Haha - I think I got a bit obsessed with this section of the forums! I'm basically posting my daily cravings. ? Didn't someone suggest putting together a high k/mg/na recipes book to raise money for support group? I can't remember where I read that.

Sounds like a good plan to me You've done quite a few now and we already have some from me and Natalie (I don't mind adding some more as me and my daughter Natalie love cooking!) If we ask the other Support Group Members if any of them would like to add a recipe or two, we could be well on the way to a fundraising project ....
